Vanilla Cupcakes
- 150g all-purpose flour
- 1 1/4 tsp baking powder
- 1 1/8 tsp salt
- 2 large eggs (room temperature)
- 150g sugar (preferably caster / superfine)
- 60g butter
- 125ml milk
- 2 tsp vanilla extract
- 1 1/2 tsp vegetable oil
- Use handheld beater to whip the eggs and sugar for a whole 7 minutes until thick and glossy
- Whisk together the flour, baking powder and salt
- Gradually add the flour mixture into the egg mixture in 3 lots mixing for just 5 seconds on speed 1
- Melt butter and heat milk
- Add oil and vanilla to the butter milk mixture
- Mix some batter into the hot milk
- Slowly pour milk mixture back into whipped eggs
- Fill cupcake liners (a bit more than halfway to the top)
- Bake 22 minutes at 160C
- Remove the cupcakes from the tray after 2 minutes
