Vanilla Cupcakes

for 12-16 cupcakes

  1. Use handheld beater to whip the eggs and sugar for a whole 7 minutes until thick and glossy
  2. Whisk together the flour, baking powder and salt
  3. Gradually add the flour mixture into the egg mixture in 3 lots mixing for just 5 seconds on speed 1
  4. Melt butter and heat milk
  5. Add oil and vanilla to the butter milk mixture
  6. Mix some batter into the hot milk
  7. Slowly pour milk mixture back into whipped eggs
  8. Fill cupcake liners (a bit more than halfway to the top)
  9. Bake 22 minutes at 160C
  10. Remove the cupcakes from the tray after 2 minutes
